Pumpkin Waffle Bread Pudding Recipe


I’ve partnered with blogger Alice Tenise to write some recipes that go along with her wine picks for her Wine Wednesdays series. Here’s our Trader Joe’s Fall inspired dessert recipe that pairs really well with NV Porto Morgado Porto Tawny. Here’s Alicia’s description about the pairing:

Port and Pumpkin dessert is the ultimate pairing: you’re going to want a sweeter wine to bring out all of the flavors of this dish. This wine has nice cherry custard notes, and it will pair well with the sweetness of the Pumpkin Waffle Bread Pudding. You can also pair a Tawny Port with your pumpkin pie during Thanksgiving as well!

PUMPKIN WAFFLE BREAD PUDDING

Serves: 6-8

Time: 45 minutes

Wine Pairing: NV Porto Morgado Porto Tawny

 

NOTES

This recipe is a fun twist on a classic, and it’s really easy to make. You can also customize this with more of your favorite fall flavors by topping it with other Trader Joe’s seasonal products like pumpkin butter, apple cider fruit spread, or their cinnamon roll spread. This is perfect for brunch, dessert, or...who am I kidding, this delicious anytime of the day.

 INGREDIENTS:

1 box Trader Joe’s Pumpkin Waffles

1 ½ cups milk

2 tablespoons butter

1 teaspoon vanilla extract

⅓ cup brown sugar

¼ cup canned pumpkin

¼  teaspoon pumpkin pie spice

2 eggs, beaten

 

DIRECTIONS:

  1. Heat oven to 350°F

  2. Butter a 4-6 cup baking dish. Cut up 8 waffles into 2 inch pieces and place in the buttered dish.

  3. In a medium sauce pan over low heat whisk milk, butter, vanilla, sugar, pumpkin, and pumpkin pie spice. Heat just until butter has melted.

  4.  Cool milk mixture for a few minutes, mix in eggs. 

  5. Pour mixture over cut up waffles. 

  6.  Bake for approximately 35 minutes or until custard has set up and the top of the waffles begin to brown. 

  7. Let cool for 5 minutes and serve warm.
